Elizabeth Droke

Dr. Droke teaches and conducts research in the area of human nutrition. Her primary area of interest is in how foods containing omega-3 fatty acids impact human health, particularly obesity and the complications associated with it. Dr Droke’s research group is interested in how consumption of foods containing flaxseed and chia seeds will affect blood lipids and risk for diseases such as heart disease and diabetes.
